Raw British honey from our own apiaries across North Shropshire, harvested in small batches and kept separate by apiary so each harvest reflects the local landscape and season.

Our honey is unpasteurised and minimally filtered, keeping it as close as possible to how it comes from the hive.

Honey from North Shropshire

Our honey comes from our own colonies across several apiary sites in North Shropshire. Rather than blending honey from different locations together, we keep each apiary's harvest separate.

This means the honey naturally varies according to where the bees have been foraging and the time of year it was harvested. Two jars harvested only a few miles apart can have noticeably different colour, flavour and texture.

Why Our Honey Changes Through the Season

Honey reflects the nectar available to the bees when it is produced. Spring crops and blossom, summer hedgerows, trees and later-flowering plants all influence the finished honey.

Our spring honey tends to crystallise relatively quickly, while some later harvests remain runny for much longer. These differences are completely natural and are part of what makes small-batch honey interesting.

Himalayan Balsam Honey

Towards the end of summer, colonies with access to Himalayan balsam can produce a particularly distinctive honey. It is usually very pale, delicate in flavour and remains runny for considerably longer than many of our spring harvests.

Our Himalayan Balsam Honey is produced when the forage is naturally available to colonies near our apiaries, rather than by moving bees specifically onto the crop.

Buying Our Honey

Our honey is available seasonally through our website and selected independent stockists. Individual batches are released as they are harvested and jarred, so the locations and varieties available change throughout the year.
