Raw Shropshire Honey | Small Batch | Unpasteurised

Honey from our own bees in North Shropshire - never blended or imported.

Harvested during May from our apiaries in Myddle and Lyneal, this Spring Honey comes from a mix of early season forage including OSR, hedgerow blossom, orchard blossom, dandelion, willow and sycamore.

The result is a pale honey with a mild floral flavour and smooth texture.

This year’s batches have developed slightly differently depending on apiary location. The Lyneal batch has already set into a spreadable honey, while the Myddle batch has remained naturally runnier and is expected to crystallise more slowly over time.

We keep batches separated by apiary wherever practical, allowing each harvest to retain its own seasonal character rather than blending everything together.

This is the jar people tend to come back for once they’ve tried it - mild, floral and not overly sweet.

The Lyneal batch is ideal for spreading on toast or crumpets, while the Myddle batch pours more easily at the moment and works particularly well in porridge or hot drinks.

Harvested once each spring in limited batches.

Because the bees forage on whatever is flowering naturally at the time, colour, texture and flavour can vary slightly between batches, apiaries and seasons.

All raw honey will naturally crystallise or set over time. This is completely normal and a sign that the honey has not been heavily processed.

Frequently Asked Questions

Why is one batch set while another is still runny?

Although both are Spring Honey harvested during May, nectar sources can vary surprisingly between apiaries depending on local forage and weather conditions.

The Lyneal batch contained a higher proportion of OSR forage, which naturally crystallises quickly into a soft set honey. The Myddle batch has remained runnier so far and is expected to crystallise more gradually over time.

Both are completely raw and unpasteurised.

 

Which batch should I choose?

If you prefer a soft set honey for spreading on toast or crumpets, we’d recommend the Lyneal batch.

If you prefer a runnier honey for drizzling, porridge or stirring into drinks, the Myddle batch may suit you better at the moment.

Both batches come from the same spring harvest period and share the same mild floral character.

 

Does runnier honey mean it’s less raw?

No. Both batches are completely raw, unpasteurised and minimally filtered.

The texture of honey naturally varies depending on the flowers the bees visited and the balance of natural sugars within the honey.

 

How is your honey processed?

Our honey is extracted, lightly strained and jarred in small batches. We do not pasteurise or ultra-filter it.

 

Why do different batches taste slightly different?

Honey reflects whatever the bees were foraging on at the time. Changes in weather, flowering conditions and apiary location all influence the final jar.

 

Do you blend batches together?

No. We keep harvests separated by apiary and extraction run wherever practical, which means each batch retains its own seasonal character.
